Boat School
The Boat School is located to the North East of the Gant Bridge. It's always open and you can take the missions as soon as you arrive, however you may receive a 4 star wanted level during the challenges if you visit before completing the mission 'Yay Ka-Boom-Boom' in San Fierro.

Boat School Essentials
The Boat School requires 5 reasonably small objectives to be completed as well as possible.
You will need to beat the target times and scores shown before every objective in order to complete the school, however getting a better rating will allow you to unlock special vehicles.
This guide will try to explain the best techniques to get a Gold medal for all of the objectives.
Rewards
Completing all of the objectives with at least Bronze will unlock the Marquis.
Completing all of the objectives with at least Silver will unlock the Squalo.
Completing all of the objectives with Gold will unlock the Jetmax.

Basic Seamanship
Description
Hold X to throttle forward and bring the boat to rest within the parallel buoys region.

Tactics
Hold accelerate for 6 seconds, then release it and hold brake.
You should come to a stop in the middle of the buoys, but you may need to try a few times as you need to finish in less than 9.6 seconds for gold.

Plot A Course
Description
Navigate through each pair of buoys. Throttle with X and use the left analog stick to steer.

Tactics
Accelerate and navigate through each of the double buoys which will be to your right every time.
You can hold the handbrake button to turn a bit sharper, but I'd just recommend staying to the inside of the buoys and level out the boat so you're always heading straight for the next lot of buoys.
The last two will require a sharper turn, but the whole thing is definitely be possible in under 30 seconds.

Fresh Slalom
Description
Navigate through the center of each pair of buoys in as quick a time as possible.

Tactics
Similar to the last objective, this requires you to make your way through a course of buoys as quickly as possible.
The first few can be done normally, just make sure you start turning just before you get there and you'll cut the corner saving a few seconds.
About half way around the course you'll need to use a handbrake turn to keep up speed.
Follow the route all of the way around and speed through the last two buoys to complete the course.

Flying Fish
Description
Power towards the jump ramp and land within the parallel buoys to register a valid jump.

Tactics
From the start, make your way to the right and head towards the bridge.
Just before you get there, turn around and accelerate towards the yellow blips on your radar.
Holding the left analog stick forward slightly seems to work the same way as a bike and give you a slight speed boost.
Launch into the ramp, then pull back on the the analog stick and you'll jump further.
You need 55M + for Bronze, and around 69M for Gold.

Land, Sea And Air
Description
Navigate through the center of each pair of buoys in as quick a time as possible.

Tactics
The course is pretty simple, but you need to go almost as fast as humanly possible to get Gold, so you should use the techniques you learned in the previous objectives in order to get through the buoys as quickly as possible.
Firstly use your radar to see where the current and next buoys are, they sort of dot around all over the place, so be prepared to turn sharply for them.
Remember to use the handbrake to turn sharply, keep to the inside of the buoys and start a turn before you get to it.
You should be able to get around in under 130 seconds for Gold.
